Western Bean Soup


I made this!

2 tbs oil
1 head of garlic, minced
3 cups chicken broth
1/2 tsp chili powder
salt and pepper
2 medium onions
1 1/2 cups dried beans
2 tbs cumin
water or beer to thin

Wash and soak beans over night. In a large pot, saute onions and garlic in oil. Add beans, broth and spices. Bring to a boil, reduce heat and simmer covered until beans are tender (for the record, a pressure cooker is awesome to have in Malawi). Remove from heat and mash to a smooth consistenct. Add beer or water to thin. Serve with fresh chipped tomatoes, onions and cilantro.
